Ingredients
Makes approximately 2 pints of curd

4 lemons (that have been zested to make another recipe such as our spring chimichurri, you can also use lemons that have been juiced)

1 cup of water

Quarter the lemons.

Put them in a pot with the water and boil for about 10-15 minutes until they are soft.

Cool for at least 30 minutes until the lemon quarters can be handled.

Add the lemon quarters to a blender (make sure they dont have seeds.

Sieve the lemon water to remove the seeds. Throw away the seeds but keep the water and pulp.

Add the water and pulp to the blender along with the lemon quarters.

Grind it in a blender for 1-2 minutes until it is completely smooth.

Spoon into containers. Place in fridge.

It will last in the fridge for 2 weeks and can be frozen without losing integrity. Enjoy!
