Warm Gingerbread

Gingerbread is warm, perfect and completely reminiscent of the season. This liqueur is delightfully balanced, absolutely delicious and an inexpensive way to make a very fresh tasting upscale gift. This liqueur is ready immediately because it uses ground spices allowing their flavor to instantly infuse into the alcohol. The vinegar heightens the flavor experience- adding a complexity and barely noticeable acidity balancing the strong molasses flavors. 

Once made, it can be used in anything to impart a delicious gingerbread flavor- add instead of your usual spices in mulled wine to bring it up a notch. Its perfect as is for a sipping spirit. Or, add a shot (2-3 Tbsp) to a warm beverage such as coffee, hot cocoa, or tea making a slightly boozy and beautifully flavored drink. For seasonal spritzers, add 1 shot of liqueur to ¾ cup (6oz) of unflavored sparkling water along with 1 tsp of simple syrup or honey (adjust to desired sweetness level).  They can also be used as direct replacement for extracts (e.g. vanilla, mint or cinnamon) in holiday baking to add a bespoke, seasonal touch to your favorite recipes: sugar/shortbread cookies, whipped cream, or creme brulee to make an extra special wintery flavored treat. Gingerbread has a bold, spicy flavor and pairs great with darker flavors like chocolate.

Ingredients

  • 1 tsp. ground ginger
  • Tiny pinch nutmeg
  • ¼ tsp. each cardamom and clove
  • ⅛ tsp. each ground black pepper, allspice, cinnamon, and table salt 
  • 2 Tbsp. vanilla extract
  • 1 tsp. molasses (cannot be replaced, is a crucial part of the gingerbread flavor) 
  • 2 tsp. apple cider vinegar
  • 1 Tbsp. brown sugar
  • 12 oz. dark or spiced rum (any alcohol can be subbed, but rum was the best)

Instructions

Add all ingredients to a foodsafe, clean, 16oz, mason glass jar with a lid, shake vigorously for 2-3 minutes to start infusing the ingredients into the liqueur. This liqueur can be served immediately, and will deepen in flavor over time. It is better to allow it to rest for a few minutes for the spices to sink to the bottom of the jar before serving, for best infusion, do not remove spices.  It is shelf stable for six months.
