Warm cinnamon is enhanced by a delicious cool mint, umami filled vanilla bean paste and rich honey to make a perfect drink. In coffee the cinnamon will take the front seat, whereas mixed with sparkling water and sugar syrup the mint and vanilla will be very present. Delightfully balanced, absolutely delicious and an inexpensive way to make a very fresh tasting upscale gift.
Once completed, these liqueurs are perfect as is for a sipping spirit. Or, add a shot (2-3 Tbsp) to a warm beverage such as coffee, hot cocoa, or tea making a slightly boozy and beautifully flavored drink. For seasonal spritzers, add 1 shot of liqueur to ¾ cup (6oz) of unflavored sparkling water along with 1 tsp of simple syrup or honey (adjust to desired sweetness level). They can also be used as direct replacement for extracts (e.g. vanilla, mint or cinnamon) in holiday baking to add a bespoke, seasonal touch to your favorite recipes: sugar/shortbread cookies, whipped cream, or creme brulee. Cinnamon mint solstice is a slightly soft flavor pairing perfectly with vanilla based baked goods.
Vanilla bean paste is found at specialty grocery stores and adds a smoother, exceedingly more complex vanilla flavor than vanilla extract. You can also make your own paste using our recipe. If you can’t find vanilla bean paste, vanilla extract is slightly less complex and wonderful as well. This recipe needs to sit for 3 days to extract the flavor from the components. During the infusion, the elements will give both their flavor and color to the liqueur resulting in a dark rum looking color. One bunch of mint, one jar of cinnamon sticks and honey will make at least 3, 16oz mason jars.

Ingredients
- 2 cinnamon sticks (crush with the back of a knife before adding)
- ¼ cup honey
- 3 Tbsp. vanilla bean paste (SUB 4 TBSP vanilla extract)
- 3 Tbsp. chopped fresh mint
- Tiny pinch table salt
- 12 oz. vodka (any alcohol can be subbed, but vodka produced the cleanest taste)
Instructions
Add all ingredients to a foodsafe, clean, 16oz, mason glass jar with a lid, shake vigorously for 2 minutes to start infusing the ingredients into the liqueur. Let the ingredients soak/infuse in the alcohol for at least three days, up to seven days. Additional shaking after day 1 will infuse a deeper flavor. To maintain food safety, strain and discard the mint and cinnamon sticks after 3-7 days and prior to gifting. This liqueur is shelf stable for six months.
